Yuba tofu "skins"/sticks?
Isa Chandra (Post Punk Kitchen) is back with a new cookbook coming out, and she recently posted a Chick'n Noodle Soup recipe with yuba - which I had to look up to find that it's tofu "skin". New to me! Has anybody cooked with yuba? I ordered some in stick form to try her recipe - also called bean curd sticks. I'd love to hear your experiences cooking with it! I can crush a block of tofu but this version is totally new to me.
