Pizza Bar on 38th - Tokyo
Ah jeez, what do you even say about this place? Best meal I've had in my entire life.
8 seats at the counter, and they make 8 different pizzas (well, one was a focaccia sandwich and one was a calzone). Everything is split 8 ways, so you get to try a bit of each. You get dessert and appetizers too - it's a whole experience. People refer to it as omakase, but it's more of a rotating menu.
We had all sorts of creative pizzas, and they work very closely with local suppliers for everything. Not only is it fantastic pizza, but it's a true farm-to-table experience.
It's not Neapolitan pizza, even though it's run by an Italian chef. It's ~7 different flours, high hydration, baked at a temperature closer to what a NY pie would be.
Worth a trip to Tokyo alone just to eat this.
