Vegan pho

I made this a couple of weeks ago. If I knew I was going to post a pic on social media I would’ve tried to present it better 😅 Turned out quite well especially after I added some hoisin sauce to the broth when serving!

I’m not a vegan, flexitarian currently but trying to go vegan at least a few times a month.
