Going to Japan in 4 days, give me your food tips

The itinerary is as follows:

• Osaka, 2 days

• Miyajima, 1 (all meals covered)

• Kyoto, 3 days

• Kanazawa, 2 days

• Takayama, 1 day (all meals covered)

• Tokyo, 4 days

Looking for restaurant suggestions or foods worth seeking out that are not the obvious tourist picks.

So far I have a reservation at Unagi Sora in Kyoto. I would like one strong omakase experience and one place to try premium sushi.
